Bacon Jalapeño Pasta

I have literally never written a recipe for anything in my entire life, so stick with me. It's probably important to note I am still very new to cooking. I make a lot of mistakes and I mess with different seasonings often. If you don't like something, skip it. Want to add something different? Do it. You're going to be the one eating it.


Bacon Jalapeño pasta


1 can whole stewed tomatoes

1 can tomato paste

1 whole onion, diced

Garlic. Like a lot.

1 jalapeño, seeds and all, diced

Splash of chicken broth

1lb of bacon, cut up into like 1 inch-ish pieces

Garlic powder

Onion powder

Red pepper chili flakes (or cayenne, or both, anything for some extra kick, if you like that kind of thing).

Italian seasoning (I also add in some extra oregano, but you do you!)

Black pepper

Salt

Get pasta cooking. However you like. While that's going, make the sauce:



1. In a pan, cook that bacon. I drain some fat (and save it to cook with later) as I go. (I don’t have an easy way to do this. It’s always messy and dangerous lol. )

2. Remove bacon, set aside.

3. Same pan, medium heat, add onions for a couple minutes. Then add jalapeño and let cook for a minute or two.

4. Add garlic, cook for another minute.

5. Add a splash of broth, get all the bits scraped up off the pan.

6. Add canned tomatoes and tomato paste. Turn down heat a smidge. Think low and slow.

7. Add seasonings! The only thing to really be careful about is salt because the bacon is plenty salty, with everything else, go wild!

8. Once everything has been simmering for a while the stewed tomatoes should pop open and mix in nicely.

9. Add your pasta - garnish with some parm or nutritional yeast.
